Extraction, Isolation, and Application of Dietary Fibers Rich in Pectins from Papayas
A process has been developed for the extraction and isolation of dietary fibers rich in pectins from papaya pulp, with the extraction of pigments, lipids, proteins, and phenolic compounds from papaya pulp; extraction of simple sugars; and drying of the material, for use in food supplements for the prevention and adjuvant treatment of colon cancer.
Preparation of Nanoparticles with Anthocyanins
Nanoparticles have been prepared with lysozyme and pectin as encapsulating agents, containing anthocyanins, bioactive compounds with antioxidant properties and effects on insulin resistance. These nanoparticles can be used in dietary supplements for adjuvant treatments of diseases and producing natural dyes, ensuring the maintenance of colors such as carmine red to violet, pink, and blue. It is accessible technology, using common equipment and natural compounds of raw materials that occur in abundance.
NutriPersona Tool – Smart Nutrition Solutions
A computational tool has been developed to represent the nutritionist’s expertise in elaborating personalized menus, using the Nutrient Intake Assessment database of the Brazilian Food Composition Table (TBCA BD-AIN), considering the patient’s nutritional recommendations and food preferences.
